I guess it mostly depends on surface area. There are other oxidizers out there too.

Is it possible to dissolve more than 1g of gold per 1ml of nitric acid?

Yes - it is "possible" --- it is also "possible" that it will take MORE the 1ml nitric (in AR) to dissolve a gram of gold

How much acid it takes to dissolve X amount of metal depends a great deal on "the conditions" under which you are dissolving the metals with your acid

I have posted about those "conditions" many times so here are some links to things I have posted to give you a better understanding about how much acid will dissolve how much metal under different conditions

Depends on the % of the nitric. 1ml of 69% will surely dissolve more than 1g of gold.

That is not quite true - though yes percent of nitric the nitric plays "somewhat" of role --- 1ml of 69% nitric will certainly dissolve more gold then say 1ml of 50% nitric

However you can not say that 1ml of 69% nitric will surely dissolve 1g gold --- & that is because "other" conditions play into dissolving metal with acid

Example - using 68% nitric - if you are dissolving a troy ounce (31.1 grams) of say gold foils you can likely dissolve that troy ounce with only (plus/minus - depending on other conditions) about 15 ml nitric

On the other hand - if you try to dissolve solid troy ounce gold coin with the same 68% nitric it will likely take (plus/minus - depending on other conditions) about 37ml nitric - so (plus/minus) 1.2 ml nitric

I've dissolved gold bars and gold powders in several kilogram batchs. 1mL of ~69% is more than enough to dissolve 1g.

Freechemist gave a good teoretical consumption of nitric that works.

Yes, but the moment it is not pure everything changes.
